Sauvignon Blanc to the Power of Three

Harvested from the same grapes from the same vineyard on the same day and arriving in our cellar, three completely different wines were created: A prime example of what ageing in the cellar can achieve.

Ageing” is the term used in winemaking to describe the maturation phase between the end of fermentation and bottling. This period is crucial for the development of the complexity and structure of the wines.

We now have three wines in our range, all made from the Sauvignon Blanc grape variety from the same Valais vineyards. They take on their different characteristics during the ageing process, which takes place in very different containers. Our sommelier Madoka Haga tasted the three wines on October 16, 2024 and describes them as follows:

“This Sauvignon comes from a steel tank. Its light golden yellow color is a delight. On the nose, I notice flavors of ripe apple, peach, orange blossom and lychee. On the palate, the wine maintains a good balance of acidity. Its juicy taste with a slightly nutty finish rounds off the experience nicely.”

“This Sauvignon Blanc was created in a concrete egg. Its shiny gold color gives a promising first impression in the glass. On the nose, I detect lime blossom, apricot, green tea and a hint of quince. On the palate, this wine is extremely creamy and very smooth. I particularly like the pleasant finish with delicate tannins.”

“This Sauvignon Blanc is matured in an amphora of marsh lime and shines in the glass with a brilliant golden yellow. The nose reveals mimosa blossoms and figs as well as spicy aromas such as pine resin. Its mineral tannins spread out in the mouth and leave a very long, pleasant aftertaste.”
